Chardonnay ORIGIN From various fields of the «Coteaux du Chablais», rather shallow soil with a high percentage of gypsum. Grapes from old vines (over 30 years) picked at full maturity. GRAPE VARIETY Chardonnay VINIFICATION Vinified in amphora 80% and 20% in the third wine barrel (Marcel Cadet - cooperage Dargaud & Jaeggle). Fermentation with indigenous yeasts, duration 20-30 days, then malolactic fermentation. Maturing on fine lees for 6 months 9 months then Amphora part in barrels. Gentle filtration to bottling. |
Assessment by Thibaut Panas This Chardonnay from Coteaux de Verschiez on the heights of Ollon is perfectly balanced between the barrel aging of 3 wines and amphora Bernard Cavé particularly fond.
The nose immediately evokes fruit with white flesh or mingle notes of fresh butter. On the palate, the acidity is very nice and just enhance the richness of the vintage. Feeling velvety finish that accompanies this long mineral finish. This wine is the perfect accompaniment gastronomy fish, crustaceans and other poultry in sauce. |
