GRAPE VARIETY

This grape variety, which originates from Côtes-du-Rhône, is called Ermitage in Valais.

VINIFICATION

The grapes of 30-year-old vines are harvested in December. To confer complexity to the wine, “noble rot” (botrytis) is applied. The wine is fermented in new barrels at a high temperature.

It is matured for 24 months.
